Pumpkin, caramelised onion and fetta flatbread
This pumpkin, caramelised onion and fetta flatbread is a great five-ingredient midweek dinner option. In just 30 minutes you can create a delicious dinner that everyone will love.
- 500g pkt Coles Australian Diced Butternut Pumpkin
- 3 x 210g Coles Kitchen Garlic & Herb Flatbreads
- 200g caramelised onion relish
- 200g Danish-style fetta, crumbled
- 30g baby rocket leaves
Line 3 large baking trays. Preheat oven to 210°C. Place pumpkin on 1 lined tray. Spray with olive oil spray. Bake for 10 mins or until just tender.
Meanwhile, place flatbreads on remaining lined trays. Spread evenly with relish.
Top flatbreads with pumpkin and fetta. Bake for 12-15 mins or until flatbreads are golden brown and crisp. Sprinkle with rocket and cut into pieces to serve.
