Quick cauliflower and broccoli soup
Beat the winter blues with this creamy cauliflower and broccoli soup. It's a speedy comfort meal and a cinch to make.
For this quick soup, you will need 2 Coles Cauliflower & Broccoli Soup pouches, some olive oil, cauliflower and broccoli florets, tofu and basil. All you have to do is heat, fry and serve for it to be ready in 20 minutes.
Start by heating the Cauliflower & Broccoli Soup with Cashew Nuts. Pour the soup into a medium saucepan over medium heat and stir without boiling until heated through.
While you’re heating up the soup, cook the toppings. Heat olive oil in a non-stick frying pan over medium heat. Cook the cauliflower and broccoli, turning, for 5 minutes or until browned and tender. Remove the vegetables from the pan and pop on a plate.
You can get organised by frying the vegetables up to two days ahead. Just store them in the fridge. Heat some more oil in the frying pan and add the tofu pieces.
Cook, turning them as you go for 5 minutes or until the tofu is crisp and golden. Ladle the soup into serving bowls and top with fried cauliflower and broccoli, crispy tofu and some basil leaves.

- 2 x 430g Coles Cauliflower and Broccoli Soup Pouches
- 1/4 cup (60ml) Coles Classic Olive Oil
- 150g pkt Coles Australian Cauliflower and Broccoli Florets
- 120g Coles Nature’s Kitchen Tofu, cut into 1.5cm pieces
- Basil leaves, to serve
Heat the soup following packet directions.
Meanwhile, heat 1 tbs oil in a non-stick frying pan over medium heat. Add the cauliflower and broccoli. Cook, stirring, for 5 mins or until the vegetables are browned and tender. Transfer to a plate. Heat half the remaining oil in the pan. Add the tofu and cook, turning occasionally, for 5 mins or until crisp and golden all over.
Divide the soup among serving bowls. Top with the cauliflower and broccoli, tofu and basil. Drizzle with the remaining oil to serve.
