Quick chicken noodle soup

Ready in just 25 minutes, this shortcut chicken noodle soup will be a favourite in the winter months.

Ingredients

  • 2 tsp olive oil
  • 1 brown onion, finely chopped
  • 2cm-piece fresh ginger, chopped
  • 1 long green chilli, seeded, sliced (optional)
  • 6 cups (1.5L) boiling water
  • 50g pkt Coles Chicken Noodle Soup Mix
  • 180g ramen noodles
  • 300g pkt Coles Kitchen Australian Powergreens*
  • 1 Coles Hot Roast Chicken, skin and bones removed, meat shredded
  • Sliced green chilli, extra, to serve (optional)

Method

STEP 1

Heat the oil in a large saucepan over medium heat. Cook the onion, ginger and chilli, if using, stirring, for 3-4 mins or until onion softens. Stir in the boiling water and soup mix and bring to the boil.

STEP 2

Add the noodles to the pan and cook for 5 mins or until tender. Stir in the greens and bring to the boil. Add chicken and stir until heated through.

STEP 3

Ladle the soup among serving bowls and sprinkle with extra chilli, if using.
