Quick green soup with beans

Full of veg and legumes, this tasty soup is a great way to feed the family on a busy weeknight. With only 5 ingredients, it’s ready in no time.

Ingredients

  • 3 zucchini, thinly sliced
  • 4 spring onions, thinly sliced
  • 4 cups (1L) salt-reduced chicken or vegetable stock
  • 400g can Coles Butter Beans, rinsed, drained
  • 280g Coles Australian Baby Spinach

Method

STEP 1 

Spray a large heavy-based saucepan with olive oil spray and heat over medium heat. Add zucchini and half the spring onion and cook, stirring, for 3-5 mins or until the zucchini is tender.

STEP 2

Add the stock and beans to the pan and bring to a simmer. Cook for 3-5 mins or until heated through.

STEP 3

Add the spinach and cook, stirring, for 1-2 mins or until the spinach wilts. Season. Ladle soup into serving bowls and top with remaining spring onion.
