Quick meatball korma

Ingredients

  • 560g pkt Coles Beef & Pork Meatballs Classic
  • 450g jar korma simmer sauce
  • 1/2 cauliflower, cut into florets
  • 450g pkt microwavable basmati rice
  • 1 bunch coriander, leaves picked

Method

  1. Step 1

    Spray a non-stick frying pan with olive oil spray. Heat over medium-high heat. Add the meatballs and cook, turning, for 8 mins or until brown all over.
  2. Step 2

    Add the simmer sauce, cauliflower and 1 cup (250ml) water to the pan. Bring to the boil. Reduce heat to medium-low and simmer for 5 mins or until the meatballs are cooked through and the cauliflower is tender.
  3. Step 3

    Heat the rice in the microwave following packet directions. Transfer the meatball mixture to a serving dish and sprinkle with coriander. Serve with rice.
