Quick one pan pumpkin gnocchi bake

Ingredients

  • 200g brown mushrooms, thickly sliced
  • 500g pkt Coles Kitchen Pumpkin Gnocchi
  • 300ml Coles Thickened Cream
  • 1 cup (120g) frozen peas
  • 1 1/2 cups (180g) Coles Australian Shredded Tasty Cheddar

Method

STEP 1

Spray a large ovenproof frying pan with olive oil spray and place over medium-high heat. Add mushroom and cook, stirring, for 2 mins or until golden brown. Add the gnocchi. Cook, stirring, for 3 mins or until golden.

STEP 2

Add the cream and bring to the boil. Add the peas and half the cheddar. Season and stir to combine.

STEP 3

Preheat grill on high. Sprinkle the remaining cheddar over the gnocchi mixture. Place the pan under the grill and cook for 5 mins or until the cheese melts and is golden and the mixture is bubbling. Cool slightly before serving.
