Quick rice puddings
Whip up these speedy rice puddings for the ultimate winter dessert.
- 450g pkt microwavable white rice
- 2 tbs caster sugar
- 1 tsp vanilla extract
- 300ml thickened cream
- 1/3 cup (80g) Coles Raspberry Jam or Coles Strawberry Jam
- 1 tbs coarsely chopped pistachios
Heat the rice following packet directions. Transfer to a heatproof bowl. Sprinkle with the sugar. Add vanilla and 3/4 cup (185ml) of the cream and stir to combine.
Divide rice mixture evenly among four 1-cup (250ml) microwave-safe bowls. Cook in the microwave on high for 2 mins or until heated through.
Top the rice mixture with a dollop of jam and use a spoon to gently marble. Drizzle with the remaining cream and sprinkle with pistachio.
