Create a quick winner on the barbie with these prawn skewers. Top them with zesty ginger-lime mayo for a tasty meal the family will love.

Ingredients

  • 1kg raw prawns, peeled leaving tails intact, deveined
  • 3 tsp sea salt flakes
  • 1/2 tsp ground white pepper
  • 1/2 tsp coarsely ground black pepper
  • 1/2 tsp Chinese five spice
  • 2 Lebanese cucumbers, peeled into ribbons
  • 1 long red chilli, thinly sliced diagonally (optional)
  • 2 spring onions, cut into matchsticks, soaked in iced water
  • 1/2 cup coriander leaves

Ginger-lime mayonnaise

  • 1/2 cup (150g) whole-egg mayonnaise
  • 2 tbs lime juice
  • 1/4 cup finely chopped coriander
  • 1 tsp finely grated ginger

Method

  1. Step 1

    Thread prawns onto soaked bamboo skewers. Combine the salt, combined pepper and Chinese five spice in a small bowl. Sprinkle the prawns evenly with half the salt mixture.
  2. Step 2

    Meanwhile, to make the ginger-lime mayonnaise, combine the mayonnaise, lime juice, coriander and ginger in a small bowl. Add 1 tbs hot water and stir to combine.
  3. Step 3

    Heat a barbecue grill or chargrill on medium. Lightly spray the prawns with olive oil spray. Cook on grill for 2 mins each side or until prawns are lightly charred and cooked through. Transfer to a plate and cover with foil.
  4. Step 4

    Arrange the cucumber, chilli, if using, spring onion curls and coriander on a serving platter. Top with prawns and sprinkle with the remaining salt mixture. Serve immediately with the ginger-lime mayonnaise.
