Quick shepherd’s pie
Take the hard work out of dinner with this quick shepherd’s pie recipe. Topped with a delicious mash, this dish is the ultimate comfort food.
- 1 tbs olive oil
- 1 brown onion, finely chopped
- 500g Coles Australian Lamb Mince
- 1 1/2 tbs tomato paste
- 1/4 cup (35g) gravy powder
- 1 tbs Coles Worcestershire Sauce
- 1 1/2 cups (210g) frozen diced vegetables
- 2 x 350g Coles Kitchen Crème Royale Potato Mash
Preheat grill on high. Heat the oil in a large frying pan over medium heat. Add the onion and cook, stirring, for 3 mins or until onion softens. Add the mince and cook, stirring with a wooden spoon to break up lumps, for 5 mins or until the mince changes colour. Add the tomato paste and stir to combine.
Sprinkle gravy powder over the mince mixture. Add Worcestershire sauce and 1 cup (250ml) water. Stir to combine. Bring to a simmer. Stir in vegetables. Cook for 5 mins or until heated through.
Meanwhile, heat the mashed potato following packet directions. Stir the mashed potato with a fork to loosen.
Transfer the mince mixture to a 5cm-deep, 6-cup (1.5L) baking dish. Spoon the mash over the top. Cook under the grill for 4-5 mins or until the top is golden brown.
Serve with flat-leaf parsley leaves and mixed salad leaves
