Rosemary kariuki’s mukimo (mashed potato)

Ingredients

  • 1kg potatoes, peeled, chopped
  • 500g pkt frozen peas
  • 500g pkt frozen corn kernels
  • 2 tsp olive oil
  • 2 brown onions, finely chopped
  • Pinch of salt

Method

STEP 1

Place the potato in a saucepan. Cover with cold water and bring to the boil over medium-high heat. Reduce heat to medium-low and cook for 30 mins or until the potato is tender, adding the peas and corn for the last 5 mins of cooking. Season.

STEP 2

Meanwhile, heat the oil in a frying pan over medium heat. Add the onion and cook, stirring, for 5 mins or until the onion softens.

STEP 3

Use a potato masher or fork to mash the potato mixture. Add the onion and salt and stir to combine. Transfer to a serving bowl.
