Rustic tomato and basil tortelloni
Strapped for time this week? Try our rustic tomato and basil tortellini. Ready in just 15 minutes, it’s a simple and delicious taste of Italy.
- 2 x 350g pkts Coles Kitchen Chicken & 3 Cheese Tortelloni
- 1/4 cup (60ml) olive oil
- 2 large garlic cloves, crushed
- 1 cup basil leaves, torn
- 200g Perino tomatoes, halved
- 2 tbs pine nuts, toasted
Cook the pasta in a large saucepan of boiling water following packet directions or until the pasta is al dente. Drain well.
Drizzle 1 tbs oil into the pan and swirl to coat the base. Return pasta to the pan with the garlic and remaining oil and toss to coat. Add the basil and tomato and toss to combine. Season.
Divide the pasta mixture evenly among serving bowls and sprinkle with the pine nuts.
Serve with finely grated parmesan and extra virgin olive oil
