Salmon and snow pea penne

Ingredients

  • 400g Coles Penne
  • 200g snow peas, trimmed, halved diagonally
  • 4 Coles Tasmanian Salmon Portions Skin Off
  • 150g tub Coles Basil Pesto Dip
  • Basil leaves, to serve

Method

  1. Step 1

    Cook pasta in a large saucepan of boiling water following packet directions or until al dente, adding snow peas for the last 10 secs of cooking. Drain, reserving 2/3 cup (160ml) cooking liquid. Return pasta mixture and cooking liquid to the pan.
  2. Step 2

    Meanwhile, heat a large frying pan over high heat. Spray with olive oil spray. Add the salmon and cook for 2 mins each side or until cooked to your liking. Transfer to a plate and set aside for 1 min to rest. Use a fork to coarsely flake the salmon. Season.
  3. Step 3

    Stir the salmon and dip into the pasta mixture. Divide among serving bowls. Sprinkle with basil to serve.
