Salmon and snow pea penne
This speedy salmon pasta is a deliciously easy midweek meal. Sprinkle with basil for a burst of fresh flavour.
- 400g Coles Penne
- 200g snow peas, trimmed, halved diagonally
- 4 Coles Tasmanian Salmon Portions Skin Off
- 150g tub Coles Basil Pesto Dip
- Basil leaves, to serve
Cook pasta in a large saucepan of boiling water following packet directions or until al dente, adding snow peas for the last 10 secs of cooking. Drain, reserving 2/3 cup (160ml) cooking liquid. Return pasta mixture and cooking liquid to the pan.
Meanwhile, heat a large frying pan over high heat. Spray with olive oil spray. Add the salmon and cook for 2 mins each side or until cooked to your liking. Transfer to a plate and set aside for 1 min to rest. Use a fork to coarsely flake the salmon. Season.
Stir the salmon and dip into the pasta mixture. Divide among serving bowls. Sprinkle with basil to serve.
