Ingredients

  • 460g pkt Coles Tasmanian Salmon Portions Skin Off
  • 1 tbs Coles Mexican Seasoning Mix Mild
  • 2 tbs orange juice
  • 1 tbs olive oil
  • 12 mini tortillas
  • 12 butter lettuce leaves
  • 100g fetta, crumbled

Salsa

  • 1 orange, peeled, finely chopped
  • 2 limes, peeled, finely chopped
  • 1 avocado, stoned, peeled, chopped
  • 1 red onion, finely chopped
  • 1/2 cup coarsely chopped coriander

Lime cream

  • 1/2 cup (120g) sour cream
  • 2 tbs lime juice

Method

  1. Step 1

    Combine the salmon, Mexican seasoning, orange juice and oil in a large bowl. Season. Heat a barbecue grill or chargrill on medium-high. Cook the salmon for 2½ mins each side for medium or until cooked to your liking. Transfer to a plate. Rest for 5 mins.
  2. Step 2

    Cook the tortillas, in batches, on the grill for 1 min each side or until lightly charred.
  3. Step 3

    To make the salsa, combine the orange, lime, avocado, onion and coriander in a small bowl. Season.
  4. Step 4

    To make lime cream, combine sour cream and lime juice in a separate bowl.
  5. Step 5

    Coarsely flake the salmon. Divide tortillas among serving plates. Top with lettuce, salmon and salsa. Sprinkle with fetta. Season. Serve with lime cream.
