Shortbread jam stars

Ingredients

  • 125g butter, softened
  • 1/4 cup (45g) caster sugar
  • 1 cup (150g) plain flour
  • 1/4 cup (45g) rice flour
  • 1/2 cup (160g) Coles Raspberry Jam

Method

  1. Step 1

    Preheat oven to 160°C. Line a large baking tray with baking paper. Use an electric mixer to beat the butter and sugar in a bowl until pale and creamy. Stir in the flour and rice flour. Turn the dough onto a lightly floured surface and gently knead until smooth.
  2. Step 2

    Roll out dough on a lightly floured surface until 3mm thick. Use 4cm and 6cm star cutters to cut shapes from dough, rerolling excess. Place on lined tray. Use 1cm and 2cm star cutters to cut shapes from the centre of half the stars. Bake for 10 mins or until light golden. Set aside on trays to cool.
  3. Step 3

    Place jam in a saucepan over low heat. Cook, stirring, for 2 mins or until jam melts. Strain through a fine sieve. Discard solids. Spread a little jam over the base of the full stars. Top with cut stars. Place remaining jam in a sealable bag. Cut off 1 small corner. Pipe into the centre of the cut stars to fill. Set aside for 15 mins to set.
