Silverbeet and black bean burritos

These black bean burritos are quick to make and bursting with savoury goodness.

Ingredients

  • 2 tbs olive oil
  • 1 brown onion, finely chopped
  • 1 red capsicum, seeded, finely chopped
  • 300g pkt Quorn Mince
  • 2 garlic cloves, crushed
  • 40g pkt burrito spice mix
  • 400g can diced tomatoes
  • 100g black beans, rinsed, drained
  • 250g pkt microwavable basmati rice
  • 8 large silverbeet leaves, trimmed
  • 1 avocado, stoned, peeled, mashed

Method

STEP 1

Heat the oil in a large non-stick frying pan over medium-high heat. Add the onion and capsicum and cook, stirring, for 2-3 mins or until the onion softens. Add the mince, garlic and spice mix and cook, stirring, for 1 min or until well combined. Add the tomato, beans and 1 cup (250ml) water. Reduce heat to medium-low. Cook for 5 mins or until the mixture thickens. Season. Add the rice and stir to combine.

STEP 2

Cook the silverbeet in a large saucepan of boiling water for 30 secs. Drain. Pat dry with paper towel.

STEP 3

Place the silverbeet on a clean work surface. Divide mince mixture evenly among leaves. Fold over the long edges and roll up to enclose the filling. Serve with the avocado.

Serve with coconut yoghurt and lemon wedges or halves.
