Ingredients

  • 2 gold sweet potatoes, peeled, cut into batons
  • 1/2 cup (50g) Coles Garlic Aioli
  • 4 Coles Australian Pork Loin Chops
  • 10g punnet sage leaves
  • 8 slices prosciutto

Method

  1. Step 1

    Preheat oven to 200°C. Line a large baking tray with baking paper. Place the sweet potato on lined tray and spray with olive oil spray. Bake, turning once, for 25-30 mins or until golden and tender. Combine aioli and 1½ tbs water in a bowl and season.
  2. Step 2

    Meanwhile, place pork chops on a clean work surface. Top each piece of pork with 2 sage leaves, then wrap with 2 slices prosciutto, tucking the ends under. Cook the pork in a frying pan over medium heat for 3 mins each side or until cooked to your liking. Transfer the pork to a plate. Cover and set aside for 5 mins to rest. Add the remaining sage leaves to the pan. Cook for 1-2 mins or until crisp.
  3. Step 3

    Divide the pork, sweet potato and aioli mixture among serving plates. Sprinkle with fried sage to serve
