Smoked salmon and soba noodle salad

Try this mouth-watering combination of smoked salmon and soba noodles. It’s the perfect fresh weeknight dinner.

Ingredients

  • 270g pkt soba noodles
  • 1 cup (160g) frozen corn kernels
  • 200g frozen edamame or broad beans
  • 2 tbs Coles Japanese Style Miso & Sesame Salad Dressing
  • 250g smoked salmon, torn
  • 150g pkt Coles Australian Superfood Leaf Blend
  • 1 red onion, thinly sliced
  • 1/4 cup (70g) drained pickled ginger

Method

STEP 1

Cook noodles in a large saucepan of boiling water following packet directions, adding the corn for the last 2 mins of cooking. Refresh under cold water. Drain well. Transfer to a large bowl.

STEP 2

Meanwhile, cook the edamame or broad beans in a saucepan of boiling water following packet directions. Refresh under cold water. Drain well. Peel edamame or broad beans and add to the noodle mixture in the bowl with the salad dressing. Toss to combine.

STEP 3

Divide the noodle mixture among serving plates with the salmon, salad leaves, onion and pickled ginger. Season to serve.
