Southern fried chicken with slaw and corn

Skip the takeaway and give this 5-ingredient southern fried chicken a go. It will be a new crowd favourite.

Ingredients

  • 1.1kg Coles RSPCA Approved Southern Fried Mixed Chicken Portions
  • 4-pack Coles Australian Sweet Corn
  • 400g pkt Coles Kitchen Australian Baby Potatoes with Butter and Parsley
  • 520g pkt Coles Kitchen Family Coleslaw Kit
  • 1/3 cup (80ml) Coles Kitchen Parmesan Ranch Dressing

Method

STEP 1

Preheat oven to 220°C. Place a baking tray in oven to preheat. Place chicken on the hot tray. Bake, turning once, for 25-30 mins or until cooked through.

STEP 2

Meanwhile, cook the corn in a large saucepan of boiling water for 15 mins or until tender. Drain well. Cook potatoes in the microwave following packet directions. Cut potatoes in half and toss with the butter mixture from the packet. Season.

STEP 3

Toss salad mix from the coleslaw kit with the ranch dressing in a large bowl. Serve with the chicken, corn and potatoes.
