Sparkling strawberry and lemon fizz
This sweet, tangy drink will be your new go-to refreshment on a warm day.
Note: + cooling & 2 hours chilling time
- 250g strawberries
- 1/2 cup (125ml) Coles Lemon, Lime & Cucumber Cordial
- 750ml sparkling wine or lemon-flavoured sparkling mineral water, chilled
Combine strawberries and cordial in a small saucepan over medium heat. Cook for 2 mins or until strawberries start to break down. Cool slightly. Transfer to a blender and blend until smooth. Strain through a fine sieve into a jug. Discard the solids. Place in the fridge for 2 hours to chill.
Divide the mixture among serving glasses. Top with wine or mineral water.

Berry ice cubes: to get ahead, freeze the puree in an ice cube tray for up to 2 weeks. Serve frozen or thaw in the fridge.
