Speedy pancetta pasta carbonara
Creamy, delicious and quick - what more could you want in a weeknight dinner? Try this speedy pancetta pasta to warm everyone up on a busy night.
- 400g fettuccine or pappardelle
- 2 x 100g pkts Provedore Pancetta Crumb
- 3 garlic cloves, crushed
- 300ml Coles Thickened Cream
- 1 cup (80g) Coles Shredded Parmesan Cheese
Cook the pasta in a large saucepan of boiling water following packet directions or until al dente. Drain, reserving ⅓ cup (80ml) cooking liquid.
Meanwhile, heat a large deep frying pan over medium-high heat. Cook pancetta, stirring, for 5-7 mins or until crisp. Add garlic and cook, stirring, for 1 min or until aromatic. Transfer one-quarter of the mixture to a plate.
Add cream and reserved cooking liquid to the frying pan. Cook, stirring occasionally, for 2 mins or until the sauce thickens slightly. Stir in half the parmesan. Add the pasta and toss to coat. Divide the pasta mixture among serving bowls. Sprinkle with remaining parmesan and reserved pancetta.
