Speedy pork and noodle stir-fry. Quick and easy stir-fries make weeknight meals a breeze. Ready in just 20 minutes, this speedy pork and noodle stir-fry is loaded with veggies. Start by cooking the noodles in a pot of boiling water, stirring occasionally, until the noodles are tender.
While the noodles are cooking, get started on the stir-fry by heating a non-stick frying pan over high heat. Add the pork and cook, stirring, for about five minutes or until the mince changes colour. When the noodles are cooked, drain them well.
Next, add the stir-fry mix to the pork and cook, tossing, until the vegetables start to wilt and become tender. Add the noodles, the hoisin sauce, a little water and chopped coriander stems. The stems add a flavour boost to the dish. Toss for a few minutes until the mixture is heated through and well combined.
Divide the stir-fry among bowls and sprinkle with coriander leaves. Dinner couldn't be easier than this tasty pork and noodle stir-fry. Give it a go this week.
- 340g Roll’d Rice Vermicelli Noodles
- 500g Coles Australian Pork Mince
- 300g pkt Coles Kitchen Ready to Stir-Fry Superfood Mix
- 1/3 cup (75ml) Roll’d Hoisin Sauce
- 1/2 bunch coriander, leaves picked, stems finely chopped
Cook the noodles following packet directions. Drain well.
Meanwhile, heat a large non-stick frying pan over high heat. Add the mince and cook, stirring, for 5 mins or until the mince changes colour. Add the superfood mix to the mince. Cook, stirring, for 3-4 mins or until the vegetables are just tender. Add the noodles, hoisin sauce, coriander stems and 1/4 cup (60ml) water. Cook, stirring, for 1-2 mins or until the noodle mixture is heated through and well combined.
Sprinkle the noodle mixture with coriander leaves to serve.
