Speedy pork and noodle stir-fry

Ready in 20 minutes, this easy pork and noodle stir-fry is a quick and delicious midweek meal.

Ingredients

  • 340g Roll’d Rice Vermicelli Noodles
  • 500g Coles Australian Pork Mince
  • 300g pkt Coles Kitchen Ready to Stir-Fry Superfood Mix
  • 1/3 cup (75ml) Roll’d Hoisin Sauce
  • 1/2 bunch coriander, leaves picked, stems finely chopped

Method

STEP 1

Cook the noodles following packet directions. Drain well. 

STEP 2

Meanwhile, heat a large non-stick frying pan over high heat. Add the mince and cook, stirring, for 5 mins or until the mince changes colour. Add the superfood mix to the mince. Cook, stirring, for 3-4 mins or until the vegetables are just tender. Add the noodles, hoisin sauce, coriander stems and 1/4 cup (60ml) water. Cook, stirring, for 1-2 mins or until the noodle mixture is heated through and well combined. 

STEP 3

Sprinkle the noodle mixture with coriander leaves to serve.
