This cheesy spinach and mushroom pizza is an easy lunch or dinner idea that will keep you full for hours.

Ingredients

  • 125g frozen spinach, thawed
  • 1 wholemeal pizza base
  • 2 tbs tomato paste
  • 50g cup mushrooms, thinly sliced
  • 1/2 red capsicum, seeded, chopped
  • 1/3 cup (35g) shredded pizza cheese

Method

  1. Step 1

    Preheat oven to 200°C. Line a baking tray with baking paper.
  2. Step 2

    Squeeze excess liquid from spinach and discard liquid. Place the pizza base on the prepared tray. Spread with the tomato paste and top with the spinach, mushroom, capsicum and cheese.
  3. Step 3

    Bake for 15 mins or until the cheese is golden and the base is crisp. Set aside on the tray to cool. Cut into wedges.

    Serve with mini pretzels, tomato salsa, plain corn chips, raspberries and nectarine
