Sticky chicken with tomato and avocado salsa

Ingredients

  • 1.8kg pkt Coles RSPCA Approved Herb Sprinkled Chicken Portions
  • Shredded flat-leaf parsley, to serve

Tomato & avocado salsa

  • 350g pkt mixed medley tomatoes, coarsely chopped
  • 1 red onion, finely chopped
  • 1 ripe avocado, stoned, peeled, coarsely chopped
  • 2 tbs olive oil
  • 1 tbs Coles Italian White Wine Vinegar

Method

STEP 1

Cook the chicken following packet directions.

STEP 2

Meanwhile, to make the tomato and avocado salsa, combine the tomato, onion, avocado, oil and vinegar in a small bowl. Season.

STEP 3

Arrange the chicken on a serving platter. Sprinkle with parsley and serve with the tomato and avocado salsa.
