Strawberries and cream marshmallow cocktail

After an indulgent cocktail recipe? This strawberries and cream marshmallow cocktail is made with ice cream and fresh berries - it’s irresistible.





  • 8 white marshmallows
  • 4 raspberries
  • 1L strawberry ice cream
  • 1/2 cup (125ml) cream liqueur, chilled
  • 1/3 cup (80ml) vodka, chilled
  • 125g raspberries, extra
  • 1 tsp vanilla bean paste



Preheat grill on medium. Line a baking tray with foil. Thread the marshmallows and raspberries onto small bamboo skewers. Cover the exposed ends of the skewers with foil. Place on the lined tray. Cook under the grill for 1-2 mins or until the marshmallows are lightly toasted.


Place the ice cream, liqueur, vodka, extra raspberries and vanilla in a blender and blend until smooth and creamy. Pour evenly among serving glasses. Top with the marshmallow skewers and serve immediately. 

Lose the booze: To make this a mocktail, swap the liqueur and vodka for 1 cup (250ml) milk.
