Strawberry and coconut bircher muesli

For a fresh start to the morning, try this delicious bircher muesli. Packed with fruit and topped with strawberry yoghurt, this one is a surefire hit.

Ingredients

  • 3 cups (270g) rolled oats
  • 1 Granny Smith apple, cored, coarsely grated
  • 1 cup (280g) vanilla yoghurt
  • 1 cup (250ml) apple juice
  • 3/4 cup (185ml) coconut milk
  • 1 tsp vanilla bean paste
  • 1 tsp ground cinnamon
  • Thinly sliced strawberries, to serve
  • Strawberry yoghurt, to serve

Quick strawberry jam

  • 250g strawberries, quartered
  • 2 tbs caster sugar
  • 1 tbs lemon juice

Method

  1. Step 1

    Combine oats, apple, vanilla yoghurt, apple juice, coconut milk, vanilla and cinnamon in a bowl. Cover with plastic wrap. Place in fridge overnight to soak.
  2. Step 2

    Meanwhile, to make the strawberry jam, combine the strawberry, sugar and lemon juice in a saucepan over medium heat. Cook, stirring occasionally, for 7-8 mins or until strawberry breaks down and releases its juice. Cook for a further 2 mins or until mixture is a jammy consistency. Remove from heat. Set aside for 30 mins to cool. Transfer to a bowl and cover with plastic wrap. Place in the fridge to chill.
  3. Step 3

    Divide strawberry jam evenly among serving jars. Top with oat mixture. Use a small heart-shaped cutter to cut hearts from strawberry slices. Arrange strawberry hearts around side of each jar. Top with strawberry yoghurt.
  4. Step 4

    Serve with rolled oats and honey.




Recipe tip

For a dairy-free Bircher muesli, use dairy-free coconut yoghurt and stir in some of the jam for the topping.
