Summer melon salad

Ingredients

  • 180g haloumi, chopped
  • 1/2 rockmelon, peeled into ribbons
  • 1/2 honeydew melon, peeled into ribbons
  • 4 radishes, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/2 bunch mint leaves
  • Basil pesto, to serve

Method

STEP 1 

Grease a non-stick frying pan and place over medium-high heat. Add the haloumi and cook for 1-2 mins each side or until golden brown. Transfer to a plate.

STEP 2 

Arrange the rockmelon, honeydew melon, radish, onion, mint and haloumi on a serving platter. Drizzle with pesto to serve.
