Sweet chilli chicken stir-fry

Throw together a great-value meal full of flavour. This chicken stir-fry uses a handful of ingredients and is ready to serve in no time.

Ingredients

  • 500g Coles RSPCA Approved Australian Chicken Thigh Fillets, thinly sliced
  • 375g pkt Coles Australian Traditional Stir-Fry
  • 150g cup mushrooms, thickly sliced
  • 180g Coles Sweet Chilli and Garlic Stir-Fry Sauce
  • 450g pkt microwavable brown rice

Method

STEP 1

Heat a wok or large frying pan over high heat. Spray with olive oil spray. Add half the chicken and stir-fry for 5 mins or until golden brown and just cooked through. Transfer to a heatproof bowl. Repeat with the remaining chicken.

STEP 2

Return chicken to the wok or pan with the vegetables and mushroom. Stir-fry for 3 mins or until vegetables are just tender. Add the sauce and stir-fry for 1 min or until heated through.

STEP 3

Meanwhile, heat the rice following packet directions.

STEP 4

Serve the chicken mixture with rice.
