This flavoursome sesame chicken is served with black noodles and veggies. It makes for a wholesome family dinner.

Tahini sesame chicken with black noodles and zucchini slices

Ingredients

  • 225g pkt Coles Wellness Road Organic Black Rice Noodles With Chia
  • 500g Coles RSPCA Approved Australian Chicken Breast Fillets, thinly sliced
  • 1 tsp sesame oil
  • 2 zucchini, thinly sliced
  • 200g edamame or broad beans, thawed, peeled
  • 4 spring onions, cut into 3cm lengths
  • 1/4 cup (60ml) salt-reduced soy sauce
  • 1 tbs Coles Wellness Road Organic Hulled Tahini
  • 1 tbs rice wine vinegar
  • Thinly sliced long red chilli, to serve (optional)
  • Toasted sesame seeds, to serve

Method

  1. Step 1

    Cook the noodles following packet directions. Drain well.
  2. Step 2

    Meanwhile, toss the chicken and oil in a bowl to coat. Heat a wok or large frying pan over high heat. Stir-fry the chicken, in 2 batches, for 5 mins or until cooked through. Transfer to a large bowl.
  3. Step 3

    Add the zucchini to the wok or pan and stir-fry for 3 mins or until just tender. Return the chicken to the pan with the edamame or broad beans, spring onion, noodles, soy sauce, tahini and vinegar. Stir-fry 1-2 mins or until well combined and heated through. Season with pepper.
  4. Step 4

    Divide the chicken mixture among serving bowls. Sprinkle with chilli, if using, and sesame seeds to serve.
