Tasty teriyaki salmon with udon noodles
For a family meal that ticks all the boxes, try this easy teriyaki salmon. It’s served with udon noodles and fresh spring onion for added flavour.
You will need udon noodles, salmon portions, teriyaki stir-fry sauce, superfood vegetable mix and spring onions to make this yummy stir-fry in 25 minutes.
Start by cooking the udon noodles in a large saucepan of boiling water for about 4 minutes or until tender. Drain the noodles well.
To remove the skin from the salmon, place the portions skin-side down on a chopping board, then run a sharp knife along each portion just above the skin. Discard the skin and coarsely chop the salmon. You could also swap the salmon for tofu.
Put the chopped salmon in a large bowl with the infusion paste from the stir-fry sauce packet. Toss to combine.
Heat a wok over high heat. Stir-fry half the salmon for 3 to 4 minutes or until just cooked. Remove from the wok and then stir-fry the remaining salmon. Return the salmon to the wok and add the finishing sauce from the packet along with a pack of Superfood Vegetable Mix.
Stir-fry for 1 minute or until the vegetables are tender. Add the noodles and stir-fry for another minute or until the stir-fry is well combined and heated through.
Divide the stir-fry among serving bowls and sprinkle with spring onions to serve.

Ingredients
- 2 x 200g pkts Coles Asia Udon Noodles
- 4 Coles Tasmanian Salmon Skin On Portions, skin removed, coarsely chopped
- 150g pkt teriyaki & sesame stir-fry sauce
- 350g pkt Coles Australian Superfood Vegetable Mix
- 2 spring onions, thinly sliced
Method
STEP 1
Cook the noodles following packet directions. Drain. Place the salmon in a large bowl with the infusion paste from the stir-fry sauce packet. Toss to combine.
STEP 2
Heat a wok or large non-stick frying pan over high heat. Stir-fry the salmon, in 2 batches, for 3-4 mins or until cooked. Return the salmon to the wok or pan with the vegetables and the finishing sauce from the sauce packet. Stir-fry for 1 min or until the vegetables are tender.
STEP 3
Add the noodles to the wok or pan and stir-fry for 1 min or until well combined and heated through. Sprinkle with spring onion to serve.
