Thai-style green chicken stir-fry

Packed with veggies, this tasty stir-fry is made using chicken that has been marinated in Thai green curry coconut sauce for a spicy kick.

Ingredients

  • 450g Coles Made Easy Chicken Stir-Fry Thai Green with Capsicum and Green Beans
  • 1 bunch pak choy, leaves separated
  • 75g snow peas, trimmed
  • 250g pkt Coles Long Grain Microwavable Rice
  • ½ cup coriander sprigs

Method

STEP 1

Heat a wok or large non-stick frying pan over high heat. Add the chicken mixture from the packet and cook for 10 mins or until the chicken is cooked through.

STEP 2

Add the pak choy and snow peas to the wok or pan. Cook for 2 mins or until pak choy wilts.

STEP 3

Meanwhile, heat the rice following packet directions.

STEP 4

Serve the stir-fry with rice and coriander.
