The new avo toast
Here’s a way to take your smashed avo to the next level. Loaded with hommus, goat’s cheese, chives and rocket, it’s the ultimate combo.
- 4 slices Coles Finest by Laurent Rye Sourdough Vienna
- 1/2 large ripe avocado, stoned, thickly sliced
- 1/2 cup (130g) beetroot hommus
- 50g Coles Finest Tasmanian Goats Cheese, crumbled
- 1 tbs chopped chives
- Baby rocket leaves, to serve
Toast the sourdough. Place on serving plates.
Place the avocado in a bowl and use a fork to gently mash. Spread onto the toast. Season. Top with the hommus and goat’s cheese. Sprinkle with the chive and rocket.
