The new avo toast

Here’s a way to take your smashed avo to the next level. Loaded with hommus, goat’s cheese, chives and rocket, it’s the ultimate combo.

Ingredients

  • 4 slices Coles Finest by Laurent Rye Sourdough Vienna
  • 1/2 large ripe avocado, stoned, thickly sliced
  • 1/2 cup (130g) beetroot hommus
  • 50g Coles Finest Tasmanian Goats Cheese, crumbled
  • 1 tbs chopped chives
  • Baby rocket leaves, to serve

Method

STEP 1

Toast the sourdough. Place on serving plates.

STEP 2

Place the avocado in a bowl and use a fork to gently mash. Spread onto the toast. Season. Top with the hommus and goat’s cheese. Sprinkle with the chive and rocket.
