Tikka masala lamb chops

Ingredients

  • 1 1/2 cups (300g) basmati rice
  • 1/2 cup (150g) Patak’s Tikka Masala Paste
  • 8 lamb loin chops
  • 270ml can coconut milk
  • 2 Lebanese cucumbers, chopped

Method

  1. Step 1

    Cook the rice following packet directions.
  2. Step 2

    Meanwhile, rub 2 tbs of the tikka masala paste over the lamb. Heat a non-stick frying pan over medium heat. Add the lamb and cook for 4 mins each side or until cooked to your liking. Transfer to a plate and cover with foil to keep warm. Wipe the pan clean. Increase heat to medium-high. Add the coconut milk and remaining tikka masala paste. Cook, stirring, for 2 mins or until heated through.
  3. Step 3

    Divide the rice among serving plates and top with the lamb. Drizzle with the sauce. Sprinkle with cucumber to serve.
