Tomato and mozzarella salad

This simple tomato and mozzarella salad is the perfect side to share. Combined with toasted sourdough and juicy peach, this dish is the perfect balance of sweet and savoury.

Ingredients

  • 1 Coles Bakery Stone Baked by Laurent Sourdough Baguette*, cut into 1cm-thick slices
  • 200g fresh mozzarella, drained, torn
  • 4 yellow peaches, stoned, cut into wedges
  • 200g red Perino tomatoes, halved
  • 200g gold Perino tomatoes, halved
  • 1/4 cup basil leaves
  • 1/2 cup (60g) pecans, chopped
  • 1/4 cup (60ml) extra virgin olive oil
  • 1 garlic clove, crushed
  • 1 tbs chopped basil

Method

STEP 1

Heat a barbecue grill or chargrill on medium-high. Spray bread with olive oil spray and cook for 2 mins each side or until lightly charred. Set aside to cool. Break bread into large pieces.

STEP 2

Arrange the mozzarella, peach, combined tomato, basil leaves and pecan on a serving platter.

STEP 3

Combine the oil, garlic and chopped basil in a small bowl. Season with pepper. Drizzle over the salad and serve with sourdough.
