  • 300ml thickened cream
  • 500g coconut yoghurt
  • 1 pineapple, peeled, cored, halved, thinly sliced
  • 6 passionfruit, halved

Method

  1. Step 1

    Coarsely break the meringues. Use an electric mixer to whisk the cream in a large bowl until firm peaks form. Add the yoghurt and fold until just combined.
  2. Step 2

    Arrange half the meringue on a serving platter. Spoon over the yoghurt mixture. Top with remaining meringue and pineapple. Drizzle with the passionfruit pulp to serve.
