  • 397g can Coles Sweetened Condensed Milk
  • 80g pkt Coles Pistachios
  • 1/2 cup (75g) dried apricots, thinly sliced
  • 1/2 cup (65g) dried cranberries

Method

  1. Step 1

    Grease a 19cm x 29cm (base measurement) slice pan and line with baking paper. Reserve 25g of the white chocolate. Place the condensed milk and remaining white chocolate in a medium saucepan over medium-low heat. Cook, stirring, for 8 mins or until chocolate melts and mixture is smooth. Remove from heat. Stir in pistachios, apricot and cranberries. Pour into the prepared pan. Place in the fridge overnight or until firm.
  2. Step 2

    Place the reserved chocolate in a microwave-safe bowl. Cook on high, stirring every 30 secs, until melted. Drizzle over the fudge. Set aside until set. Store in an airtight container at room temperature for up to 3 weeks.

While this recipe calls for the ingredients to be melted in a saucepan over low heat, it is possible to use the microwave. Ensure you’re heating in bursts and stirring often. 

As an added step, you can also soak the dried cranberries and apricots in boiling water. Let them sit for 10-15 minutes, then discard the water. You’ll be left with plumper, juicer and softer fruit to elevate your white chocolate and condensed milk fudge to the next level.
