Ingredients

  • 2 white peaches, stoned, coarsely chopped
  • 1 lemon, juiced
  • 2 tbs caster sugar
  • 3 cups (750ml) prosecco, chilled
  • 4 scoops lemon sorbet

Method

  1. Step 1

    Place the peach or nectarine, lemon juice and sugar in a medium saucepan over medium heat. Cover and cook, stirring occasionally, for 5 mins or until the fruit is tender. Set aside for 5 mins to cool slightly. Transfer to a blender and blend until smooth. Chill for 1 hour.
  2. Step 2

    Divide the peach or nectarine mixture evenly among serving glasses. Pour over the prosecco. Top with the sorbet and serve immediately.

Lose the booze: To make this a mocktail, swap the prosecco for raspberry or lemon flavoured sparkling mineral water.

 Smart wrap: You can use nectarines instead of peaches. Also, if you don't like lemon, you can use mango or berry sorbet.
