Yellow curry tofu stir-fry
This fragrant yellow curry stir-fry is a must-try. It’s a quick and easy vegetarian dinner that the whole family will enjoy.

Ingredients
- 1 tbs peanut oil
- 500g Coles Nature’s Kitchen Firm Tofu, cut into 2cm pieces
- 1 red onion, cut into wedges
- 1 red capsicum, seeded, thinly sliced
- 1 large zucchini, halved lengthways, thinly sliced
- 200g snow peas
- 125g pkt baby corn, halved
- 1/4 cup (75g) yellow curry paste
- 1 cup (250ml) Coles Light Coconut Milk
- 1 tbs lime juice
- 2 tsp fish sauce
- 2 tsp brown sugar
- 450g pkt microwavable jasmine rice
Method
STEP 1
Heat half the oil in a wok or large frying pan over high heat. Add the tofu and stir-fry for 5 mins or until brown all over. Transfer to a plate.
STEP 2
Heat the remaining oil in the wok or pan. Add the onion, capsicum, zucchini, snow peas and baby corn and stir-fry for 2-3 mins or until just tender. Add the curry paste and cook, stirring, for 1 min or until aromatic. Return the tofu to the wok or pan with the coconut milk, lime juice, fish sauce and sugar. Cook, stirring, for 2 mins or until heated through.
STEP 3
Meanwhile, heat the rice following packet directions.
STEP 4
Transfer the tofu mixture to a serving dish. Serve with the rice.
