1. Bring to room temperature
To help the steaks cook evenly, bring them to room temperature about 30 minutes before you start cooking.
2. Test with your fingers
Here’s how to check your steak is medium-rare: lightly press it with your fingers. It should feel soft and springy.
3. Slicing the steak
When slicing steak, use tongs to hold it in place while cutting. Don’t use a fork, as piercing meat can cause juices to escape.
