Get-ahead dinners

Try these easy weeknight dinner recipes that can be prepped ahead to save you time. 

1. Tandoori chicken with flatbread

Make the hommus up to 3 days ahead and marinate the chicken up to 2 days ahead. Store in separate airtight containers in the fridge. 

2. Pork and eggplant parmigiana

Cook the pork and eggplant up to 2 days ahead. Store in separate airtight containers in the fridge. Bring to room temperature before grilling. 

3. Sweet potato zucchini fritters

Cook the fritters up to 2 days ahead. Store in an airtight container in the fridge. Reheat in an oven at 180℃ for 15 mins, or in a preheated sandwich press for 2-3 mins or until heated through. 

4. Prawn san choy bow

Cook the prawn mixture up to 1 day ahead. Store in an airtight container in the fridge. Reheat in a wok or large frying pan until the prawns are heated through, or serve them chilled in the lettuce cups. 

5. Roasted vegetable and sausage pasta 

Roast the veg up to 3 days ahead. Cover and store in the fridge. Bring to room temperature before adding to pasta.
