Stand the pineapple upright on the base and cut down to remove the skin. Don’t cut too deep as the outer flesh is the sweetest part of the fruit.
Carefully cut the pineapple into quarters lengthways. One at a time, stand the quarters upright and cut down the centre to remove the core.
Lay the pineapple quarters on a chopping board and cut crossways into 1 cm-thick slices.
