Reduce the oil: If you’d like to use less oil, spray the pan with olive oil spray or extra virgin olive oil spray instead of using olive oil to cook the fritters.
Add baby spinach: For extra veg and fibre, thinly slice some baby spinach leaves and stir through the muffin batter before baking.
Swap couscous: To increase the amount of veg in this dish, replace the couscous with cauliflower rice and reduce the stock to 1/2 cup (125ml).
