Pork sausages are one of the best value ways to add meat to your meals, and we’re not just talking classic bangers and mash. One trick used in Italian pork sausage recipes is removing the skins from sausages – much easier than using mince and seasoning it yourself. Then cook the pork sausage mince as you would regular pork mince or break it up into meatballs. Sausage mince is also ideal for wrapping in pastry to make pork sausage rolls. 1. Tomato, rosemary and sausage spaghetti

Like a gourmet version of spaghetti and meatballs, this Italian pork sausage pasta has sausage chunks in a rustic sauce made with onion, garlic, fresh rosemary and sweet canned cherry tomatoes. Plus, it only takes 25 minutes to prep and cook. Serve it up with lots of freshly grated parmesan.

2. Pork sausage and ricotta pizza

Italian sausage meatballs also make a perfect easy pizza topping and they’re often matched with herbs such as rosemary and fresh veggies such as broccoli, kale, or potato. This version pairs sausage and rosemary with another Itallian flavour combo - zucchini, ricotta and basil pesto. Add chilli if you like it hot.

3. Pork and apple sausage rolls

Pork and apple is a classic flavour match so apple pork sausage rolls are a step up from the usual sausage rolls. Use sausage mince and regular pork mince for this recipe. Apple adds moisture as well as sweetness, so you’ll need to add breadcrumbs to help soak it up.

4. Sausage and potato tray bake

For a twist on smashed spuds, bake baby potatoes until tender, lightly crush them on the tray then add pork chipolata sausages and red onion wedges and bake until browned and cooked through. Add cherry vine tomatoes for the last 15 minutes of cooking and serve with tangy salsa verde.

Sausages are always welcome at a barbecue, but here’s a fresh spin on the classic. Thread chipolatas onto double skewers and cook on a hot barbecue or chargrill, brushing with the sweet chilli glaze. Then serve with zesty cabbage, spring onion and chargrilled corn slaw for a tasty weeknight dinner. 

7. Pumpkin and sausage rotolo

Here’s another tasty way to combine pork sausages and ricotta, Italian style. This delicious warming bake is a twist on lasagne with sheets rolled up with the filling instead of layered in the dish. The sweet pumpkin, sage and pork sausage flavours combined with the cheesy topping make this irresistible.

8. Beer and bacon toad in the hole

This British favourite of pork sausages in a bed of fluffy, golden Yorkshire pudding is a hearty comfort food dinner. For extra flavour, we’ve wrapped the sausages in streaky bacon and added a splash of beer to the batter as well as to the rich mushroom and caramelised onion gravy. 

9. Sausage penne boscaiola

We’ve updated the classic boscaiola sauce by swapping the traditional pancetta or bacon for pork sausage mince.
