Sticky Chicken with Tomato & Avocado Salsa

Ingredients

  • 1.8kg pkt Coles RSPCA Approved Herb Sprinkled Chicken Portions
  • Shredded flat-leaf parsley, to serve
Tomato & avocado salsa
  • 350g pkt mixed medley tomatoes, coarsely chopped
  • 1 red onion, finely chopped
  • 1 ripe avocado, stoned, peeled, coarsely chopped
  • 2 tbs olive oil
  • 1 tbs Coles Italian White Wine Vinegar

Method

  1. Cook the chicken following packet directions.
  2. Meanwhile, to make the tomato and avocado salsa, combine the tomato, onion, avocado, oil and vinegar in a small bowl. Season.
  3. Arrange the chicken on a serving platter. Sprinkle with parsley and serve with the tomato and avocado salsa.
