Mushroom Bolognese with Pasta Spirals

Ingredients

  • 2 garlic cloves
  • 250g brown mushrooms
  • ⅓ cup basil leaves
  • 250g Coles Australian No Added Hormones 4 Star Beef Mince
  • 500g jar tomato pasta sauce
  • 300g fusilli pasta

Method

  1. In a food processor, pulse garlic until coarsely chopped. Add the mushrooms and basil and pulse until finely chopped. In a medium bowl, stir the mushroom mixture and mince until well combined.
  2. Heat a large heavy-based frying pan over medium-high heat. Add the mince mixture. Cook, stirring to break up any lumps, for 5 mins or until cooked through. Add pasta sauce and 1/2 cup (125ml) water. Bring to the boil. Reduce heat to low. Simmer, stirring occasionally, for 10 mins or until sauce thickens slightly.
  3. Meanwhile, in a large saucepan of boiling water, cook the pasta following packet directions or until al dente. Drain, reserving 1/4 cup (60ml) of cooking liquid.
  4. Add the pasta to the sauce mixture in pan and toss to coat, adding enough reserved cooking liquid to loosen the sauce if necessary. Season with pepper.
