Glazed Pork Fried Rice

Ingredients

  • 500g Cook with Curtis Chinese Recipe Pork Mince
  • 2 tbs oyster sauce
  • 1 tbs vegetable oil
  • 2 carrots, peeled, finely chopped
  • 2 spring onions, thinly sliced, white parts and green parts divided
  • 4 cups (600g) cold steamed white rice
  • 1½ cups (120g) thinly sliced wombok
  • 1 tbs soy sauce

Method

  1. Heat a non-stick frying pan over high heat. Add the pork and stir-fry, breaking up into 2cm pieces, for 4 mins or until cooked through. Stir in oyster sauce. Cook for 1 min or until pork is well glazed. Transfer to a bowl.
  2. Wipe out pan. Return pan to high heat. Add oil, carrots and white parts of spring onions. Stir-fry for 30 secs. Add the rice and stir-fry for 1 min or until heated through. Add pork, wombok and soy sauce and stir-fry for 1 min.
  3. Transfer pork mixture to serving bowls. Sprinkle with green parts of spring onions.
