Pork Chow Mein with Baby Broccoli and Shiitake

Ingredients

  • 350g pkt fresh Singapore noodles
  • 500g Cook with Curtis Chinese Recipe Pork Mince
  • 1½ tbs vegetable oil
  • 1 bunch baby broccoli, thick ends of stems trimmed, halved lengthways
  • 100g shiitake mushrooms, stems trimmed, thinly sliced
  • 3 spring onions, sliced, white and green parts divided
  • ⅓ cup (80ml) oyster sauce

Method

  1. Prepare noodles following packet directions. Rinse under cold water. Drain.
  2. Heat a large non-stick frying pan over high heat. Add pork. Stir-fry, breaking up into 3cm pieces, for 4 mins or until browned and cooked through. Transfer to a plate.
  3. Heat oil in pan over high heat. Add baby broccoli and mushrooms to pan. Stir-fry for 3 mins or until baby broccoli is just tender. Add white parts of spring onions and stir-fry for 30 secs. Return pork to pan. Add noodles, oyster sauce, ⅓ cup (80ml) water and half of green parts of spring onions. Toss to heat through.
  4. Divide evenly among bowls. Top with remaining spring onions to serve.
