Asian-Style Baked Snapper

Ingredients

  • 1 red capsicum, seeded, thinly sliced
  • 4 Coles Australian Snapper Portions
  • ¼ cup (60ml) soy sauce
  • 2 tbs mirin seasoning
  • 2 tsp finely grated ginger
  • 1 garlic clove, crushed
  • 1 tsp sesame oil
  • 1 bunch choy sum, halved
  • 2 spring onions, thinly sliced diagonally
  • ½ cup coriander sprigs
  • Lime cheeks, to serve

Method

  1. Preheat oven to 200˚C. Line a large deep baking tray with baking paper.
  2. Arrange the capsicum over the lined tray. Top with the snapper.
  3. Combine the soy sauce, mirin, ginger, garlic and sesame oil in a small jug or bowl. Drizzle over snapper in tray. Bake for 12 mins or until snapper is almost cooked through. Add the choy sum to the tray. Bake for a further 3 mins or until the choy sum wilts and the snapper is cooked through.
  4. Sprinkle snapper with spring onion and coriander. Serve with lime cheeks.
