Herb & Sons Beef-Free Sausages


  • 1 tbs olive oil
  • 450g Herb & Sons Beef-Free Sausages
  • 6 Coles Bakery Hot Dog Rolls
  • ½ cup (150g) mayonnaise
  • 2 tsp sriracha or chilli sauce
  • 1 lime, juiced
  • 2 tbs chopped coriander
  • 3 Coles Australian Qukes Baby Cucumbers, quartered
  • 1 carrot, peeled, cut into long matchsticks
  • Coriander sprigs, to serve
  • Thinly sliced red chilli, to serve (optional)
  • Spring onion curls, to serve
  • Lime wedges, to serve


  1. Heat the oil in a medium frying pan over medium heat. Cook the sausages, turning occasionally, for 10 mins or until browned and cooked through.
  2. Use a large serrated knife to split the rolls lengthways (don’t cut all the way through). Combine the mayonnaise, sriracha or chilli sauce, lime juice and chopped coriander in a bowl.
  3. Spread cut sides of the rolls with the mayonnaise mixture. Fill with cucumber and carrot and top with sausages. Sprinkle with coriander sprigs, chilli, if using, and spring onion curls. Serve with lime wedges.
