Plant-Based Mexican Burger


  • 2 x 220g pkts The Alternative Meat Co. The Alternative Burger
  • 2 tsp Mexican seasoning
  • 1 tbs olive oil
  • 2 avocados, stoned, peeled, chopped
  • 1 tbs lemon juice
  • 2 tbs chopped coriander
  • 2 tbs chunky tomato salsa
  • 1/3 cup (100g) light vegan mayonnaise
  • 4 round bread rolls, split
  • 8 small cos lettuce leaves, trimmed
  • 1 red onion, thinly sliced
  • 1 tomato, thinly sliced
  • 12 pickled jalapeño slices, drained


  1. Place the burger patties on a clean work surface. Sprinkle both sides of the patties with Mexican seasoning. Heat the oil in a large frying pan over medium heat. Add the patties and cook for 3-4 mins each side or until cooked through.
  2. Meanwhile, mash the avocado in a small bowl until smooth. Stir in the lemon juice and coriander. Season. Place the mayonnaise in a separate small bowl. Add the tomato salsa and gently swirl to marble.
  3. Divide the roll bases among serving plates. Top with lettuce, tomato, onion and patties. Top the patties with the avocado mixture, jalapeños and mayonnaise mixture. Top with the roll tops and serve immediately.
