Porterhouse Beef Tacos

Ingredients

  • 2 corn cobs, husks and silk removed
  • 4 Coles Australian No Added Hormones Beef Quick Cook Porterhouse Steaks (180g)
  • 40g pkt Coles Mexican Seasoning Mix
  • 1 tbs olive oil
  • 8 flour tortillas
  • 4 iceberg lettuce leaves, shredded
  • 2 avocados, stoned, peeled, chopped
  • 2 tomatoes, chopped
  • 2 spring onions, thinly sliced
  • ¼ cup (65g) mild tomato salsa
  • ½ cup (140g) Greek-style yoghurt
  • Lime wedges, to serve

Method

  1. Heat a chargrill on high. Cook the corn, turning, for 8 mins or until charred. Cool slightly. Use a serrated knife to cut down the side of the corn to release the kernels.
  2. Meanwhile, sprinkle the steaks with taco seasoning and rub with oil. Cook on grill for 2 mins each side for medium or until cooked to your liking. Transfer to a plate. Cover with foil. Set aside for 5 mins to rest. Thinly slice.
  3. Heat the tortillas following packet directions. Arrange on a serving platter. Top with lettuce, avocado, tomato, corn, spring onion and steak. Spoon over the salsa and yoghurt. Serve with lime wedges.
